A look in to God's own country-Erisery



I have been wanting to do this dish a long time but finally today was the day. No anecdotes to this but i always like kerala dishes for  their subtle flavor. I make few of them at home. Luckily my husband also likes them but using coconut liberally is quite a bother these days. Seasoning with coconut oil tastes heavenly. These kind of coconut demanding dishes always go last on priority and become" once in a while" kinda dish. The recipe as such is a simple one with the most available ingredients.

Ingredients

1 cup white punpkin cubes
1/2cup moong dhal cooked
2 tablespoons coconut grated
1 teaspoon jeera
1/2 teaspoon hing
curry leaves a few
3 red chillies
salt to taste
coconut oil for seasoning
turmeric a pinch

Method

Grind the coconut, with the chillies and jeera after reserving 1 or 2 teaspoons of coconut. Cook the pumpkin in the microwave till done but firm along with turmeric. Now mix the moog dhal along and heat them on a skillet and add the ground paste. Just bring the whole mixture to a boil just once and adds alt and switch off the heat, stir in the coconut reserved. Season it with hing and few curry leaves. Traditionally served with white rice but again, i had it with rotis, tasted good!
