Tri colour capsicum rice





This is a very simple recipe start to finish.Been a regular at home for sometime now. It is a good choice if you want a typical desi and yet a contemporary taste. The flavors induced are freshly ground and are married well to give the taste . It can be termed as a cousin to vangi bath in which almost  the same spices are added but it is also apart from vangi bath because of the crunch the peppers have. Quite a contradiction there. I leave that to you to figure out. The colour trio sure do make this dish a visual feast. One spoonful of this rice tastes like -crunch,nutty,spicy,tangy and overall desi.

Ingredients

Half yellow pepper chopped to thick strips
Half red pepper chopped to thick strips
Half green pepper chopped to thick strips
2 green chiilies slit
1 teaspoon fennel seeds
1 cup basmathi rice washed and drained
juice of 1/2 lemon
2 teaspoons ghee

To dry roast and grind

1 tablespoon coriander seeds
1 teaspoon jeera
1 teaspoon urad dhal
1 teaspoon channa dhal
1 tablespoon peanut
1 tablespoon coconut
1/4"cinnamon
2-3 red chillies


Method

Cook the rice and have it ready. Dry roast and powder the ingredients. Heat a skillet and add 2 teaspoons of ghee and season it with fennel seeds. Now add the pepper strips in to it and saute it  for a few minutes. You want to have them crisp and juicy . Then add the powered ingredients to it and mix in the rice also,along with salt. In the end add the lemon juice and enjoy.
