Classic minestrone soup.
This soup itself can be served as a main course because it is so filling that you cannot just take anything more. It is basically served with lots of bread and cheese. But i had just that for dinner. An one pot meal where you can get your family to consume more veggies at one go. Tastes good for fussy eaters too. Has a taste of its own. Pasta in the soup makes it a delight for kids too. A must try!
Ingredients
1 cup celery chopped
1 cup carrots chopped
1 cup bell pepper chopped
1 cup potato chopped
1 cup green beans chopped
2 cloves garlic crushed
3 cups chopped tomatoes
1 cup cooked pasta
2 teaspoons olive oil
1/2 teaspoon oregano
salt and pepper to taste
Method
In a pressure cooker heat the olive oil, add garlic & tomatoes and saute them for about 2 to 3 minutes and then add all the vegetables one by one. Add water so that the vegetable are completely immersed and you have about 3 inches of water above it. Close the cooker and cook it till you get one whistle. After done add the pasta also to it. Add salt and pepper. I added a teaspoon of tomato ketchup and a tablespoon of parmesan cheese to it. You can try it too. A dollop of cream is also a good option!
